Guacamole Graveyard (Gluten & Dairy Free)
As a starter for my Halloween dinner party this year, I decided to create a spooky guacamole graveyard! As I was catering for both gluten free and dairy free guests, this was a great option for everyone to enjoy while I cooked the main.

Ingredients
5 avocados
Juice of 1 lemon
1/2 red onion
2 vine tomatoes, chopped
1 tsp chilli flakes
1/3 tin black beans
5 Schar gluten free cream crackers (or any other sturdy, square crackers)
Black food colouring
Fine paintbrush or toothpick
Method
Peel and pit the avocados. Mash with a potato masher or the back of a fork until combined and relatively lump-free.
Dice the onion and tomatoes and mix in to the avocado along with the lemon juice and chilli flakes.
Spread the guacamole out in a square or rectangular dish.
Paint ‘RIP’ on each of your crackers using the black food colouring. Carefully stand the crackers up in the guacamole. I recommend doing this as close to eating as possible to avoid the crackers going soft and collapsing.
Decorate the ‘gravestones’ by placing a spoonful of black beans along the front of each to represent the soil (see picture above).
Serve with gluten and dairy free tortilla chips (I like Nature’s Store).
