Kit Kat Bunny Cookie Slices (Gluten Free)

The discovery that Kit Kat bunnies are gluten free might just be my foodie highlight of 2020 so far. Normal Kit Kats are not gluten free, but the bunnies really do have that Kit Kat flavour and are dangerously moreish!

As I’m writing this the UK has just entered “lockdown”, so we’re all staying home to stop the spread of Covid-19. We’re going to need to keep ourselves entertained, and baking is such a great way to pass the time, de-stress and make yourself some tasty treats without leaving the house.

These Kit Kat bunny cookie slices are soft, gooey, sweet and just the right size to be a perfect treat with a cuppa when you’re working from home (or once we’re back in the office!). I reckon they would also post well if you wanted to send an Easter treat to friends or family.

Ingredients

8 mini Kit Kat bunnies (you get enough in the bag of mini bunnies)

200g gluten free plain flour (I use doves farm)

140g unsalted butter, softened

120g chocolate chips (make sure to check they’re gluten free)

100g brown sugar

50g caster sugar

1 large egg

1 1/2 tsp baking powder

1 level tsp xantham gum

1 tsp vanilla extract

Pinch of salt

Method

  1. Preheat the oven to 180° C. Line a loose bottomed sandwich tin (a square tin would also work, or even an oven sheet tray) with a circle of baking paper, and grease the sides using butter or oil.

  2. In a large bowl, combine the flour with the baking powder, chocolate chips, xantham gum and salt.

  3. In another large bowl, cream together the butter and sugars until pale and fluffy, then add in the egg and vanilla extract and beat together until well combined.

  4. Add in the flour mixture, and mix until you have a soft dough.

  5. Spoon the mixture into the prepared cake tin and smooth over with a pallette knife or spatula so that it is relatively even.

  6. Bake for 15-18 minutes. The cookie should be golden but will still be slightly soft in the centre.

  7. Immediately once the cookies are out of the oven, press the kit kat bunnies into the cookie as shown in the pictures.

  8. Leave to cool for at least 15 minutes (or the cookie will fall apart!). If you can avoid the temptation of eating the gooey cookie warm out of the oven, the best chance to get it out in one piece is once it cools completely.

  9. Slice into 8 slices.
