Yorkshire Puddings (Gluten Free)

If you’re in the market for an easy, no fail, guaranteed to rise Yorkshire pud recipe, I’ve got you covered.

I use a mix of cornflour, which is light so they rise perfectly, and gluten free plain flour, which I find makes them taste much better than just cornflour, for the ultimate gluten free but-you-wouldn’t-know-it Yorkie pud.

You can make them in a yorkshire tin like as pictured below for wider ones, or a muffin tin for big puffy ones.

The trick to get them to rise? (1) HOT oil. Really HOT oil. There’s no shortcut here, your oil needs to be in the oven for at least 15 minutes. (2) leave that oven shut! If you open the oven while they’re cooking you’ll have flat Yorkshires.

Ingredients (makes 4)

  • 4 tbsp vegetable oil

  • 50g corn flour

  • 15g gluten free plain flour (I use Freee by Doves Farm)

  • 2 eggs

  • 100ml milk (or dairy free alternative)

  • pinch of salt and pepper

Method

  1. Pre-heat the oven to 200°C (if you’re already cooking your roast dinner, raise the heat slightly).

  2. Pour 1 tbsp oil into each hole in your Yorkshire tin or muffin tin. Place in the oven for at least 15 minutes and up to 20 minutes.

  3. Prepare the batter. Mix the flours together in a mixing bowl, and add a pinch of salt and pepper. Create a well in the centre of the flour, and crack in the two eggs. Mix a little with a whisk, and then pour in the milk. Whisk together until you have a thin, lump free batter.

  4. If you’re making a roast, now is the time to toss your potatoes (you won’t be able to open the oven once the yorkies are in). Take them out and put them back in as quick as you can so as not to stop the oil heating up.

  5. Once the oil has been in 15-20 minutes, working as quickly as you can (the oil needs to stay as hot as possible!), open the oven door and pour the batter into the Yorkshire or muffin tin (it should sizzle). It helps if you put the batter into a jug first.

  6. Make sure you do not open the oven (even for a peek) whilst the Yorkshire puddings are cooking. This will stop them from rising. Cook for 25 minutes.
